HOW TO ENJOY TASTY CHICKEN SALAD AS PART OF HEALTH EATING

How can you best describe healthy eating?  It is not about strict diet limitations, starving yourself to get that perfect body, or denying yourself from those foods you love.  Rather, we can say healthy eating is about feeling great, feeling energized, staying in good shape and stabilizing your mood.

In this article we look at chicken salad being part of a healthy meal that you can eat no matter what time of the day it is. A meal that you can all enjoy as a family.

A GUIDE TO A HEALTHY CARIBBEAN CHICKEN  SALAD RECIPE:

INGREDIENTS:

  • 1 or 2 boneless chicken breast cut into halves.
  • Teriyaki marinade sauce.
  • 2 tomatoes, finely chopped.
  • Half chopped onion.
  • 2 teaspoons chopped cilantro.
  • 2 teaspoons minced jalapeno pepper.
  • ¼ cup mustard of your choice.
  • ¼ of honey.
  • 1 ½ tablespoon white sugar.
  • 1 tablespoon oil
  • 1 ½ cider vinegar and lime juice
  • ¾ mixed salad greens

 

METHOD:

  • Place the chicken in a bowl, and cover with the teriyaki marinade sauce. Let it sit in the refrigerator for at least two hours.
  • In a small bowl mix the tomatoes, onion, jalapeno pepper, and cilantro. Cover the mixture and refrigerate.
  • In a separate bowl, mix the mustard, honey, sugar, oil, vinegar, and lime juice. Cover dressing, and refrigerate.
  • Preheat the grill for high heat.
  • Lightly oil grill grate. Place chicken on the grill, and discard marinade. Cook for 6 to 8 minutes on each side, or until juices run clear.
  • Arrange mixed salad greens on plates. Spoon some of the salsa over each salad, and sprinkle with 1/4 of the pineapple chunks. Break tortilla chips into large chunks, and sprinkle over salads. Lay some of the grilled chicken strips on each salad. Finally, sprinkle dressing over each salad, and serve.
